Avocado Ice Cream?
- 1 avocado cut in quarters and frozen (remove from the skin and remove the pit)
- 1/4 c coconut milk (I used the light coconut milk from Trader Joe’s)
- 1/4 c raw cacao powder or dark cocoa powder
- 2 small bananas frozen
- Topping of your choice, I used a little salted caramel sauce and Pro2Bites cookie crumble
Place the avocado, banana, cacao powder and coconut milk in your blender. Process until smooth. Stopping to scrape down the sides to make sure all is incorporated. Once the mixture is thick and creamy, spoon it out of your blender and top with your favorite toppings! Makes 2 large servings.
