Coconut Oatmeal Cookies with Dark Chocolate Covered Cranberries

  • 1 1/2 C rolled oats
  • 3/4 C all purpose flour
  • 1/2 C brown sugar
  • 1/8 C sugar
  • 1/2 tsp baking soda
  • salt
  • 1/2 C chocolate covered cranberries from Trader Joe’s
  • 1/2 C softened butter
  • 1/4 C crushed coconut chips from Trader Joe’s
  • 1 Egg
  • 1 T maple syrup

How to:

Combine the softened butter and sugars. beat until combined. Add the maple syrup and egg. Stir to combine and add the flour, baking soda and salt. Mix just until it is combined. Add the oats and chocolate covered cranberries. Stir until combined. The dough will be very stiff. Let the dough rest in the refrigerator at least 1 hour or more. If you keep it in the refrigerator more than 3 hours, you will need to let it soften for 30 minutes before scooping.

Scoop by rounded tablespoons onto a prepared cookie sheet and top with the crushed coconut chips. Bake at 350 degrees 10 minutes. Remove from oven and let rest on the cookie sheet 1 minute before transferring to a cooling rack. These cookies will be chewy and delicious!
