How to cook Harry Potter cake

For the sponge

  1. Preheat the oven to 350°F (180°C). Grease your cake tin (in this case we’ve used 3 shallow 8 inch/20cm tins, but you can use a deep one and then just slice it after baking) and set aside.
  2. In a large mixing bowl, place the softened butter and sugar, then beat together until pale.
  3. Add the rest of the ingredients and continue beating until the mixture becomes smooth.
  4. Divide the batter between each cake tin, gently smoothen the tops.
  5. Bake for 25 minutes. If you’re not sure whether it’s ready, insert a skewer – if it comes out clean, it’s done!
  6. Don’t remove the tins until the sponge is cooled down a bit, 10 minutes should be enough. Remove the cake from the tins and transfer to a cooling rack.

For the mascarpone cream

  1. You’ll need an electric mixer for this one. Place the mascarpone and salt in a large mixing bowl. Mix it together at low speed.
  2. While the motor is running, pour in the cream – slowly, gradually, not all at once. Then increase the speed a bit and start beating in the sugar. Continue until you see “blobs” forming.
  3. This should take around 4 cups of creamy deliciousness. Set aside around two-thirds of it – you’ll need it for the cake’s filling.
  4. Add food coloring to the remaining ⅓ of the cream. A few drops should be enough. Use the mixer on a medium setting and give it a  good mix.

Putting it all together

  1. Once the sponges are cooled, lay one with the topside down on a cake stand. Spread with half of your “white” mixture. Top with another sponge (topside up this time) and push down gently. Spread another half of the white cream and top with the last layer of the cake.
  2. Ice the top of the cake with the pink mascarpone mixture by piling it in the center. Then spread it to the sides, then gradually bring it down the sides. Smooth with a spoon (or a palette knife if you have one).
  3. Last, but not least – use a green icing marker to write “Happee birthdae Harry” or the name of the Birthday boy or girl.

Tips for making Harry Potter cake:

As I said, flaws are Encouraged and Accepted in this

cake. However, there are a few basic tips you can follow to create the decorating
procedure super easy!

Degree your cake layers You can do this with a knife or a cake leveler. I use baking strips once I bake cakes so I can bypass this step!

Use a milder icing suggestion if the lettering is not something! I used Wilton #2, but you might utilize #3 or #4 to make it simpler.

Drag a toothpick through the cake to make the iconic crack down the top.

Any Potterhead would like to get this for their birthday.

Harry’s 11th birthday does not begin too well.  The Dursleys did not recall it and even when they did they probably would not care in any way.  From the film, it is among the wildest scenes of all of them.  Harry pulls his own birthday cake at the dirt around the ground and blows out candles that are fanciful.   I would not trust Hagrid’s first recipe — recall his stone cakes?  Barely edible.  But here is a far superior variant: chocolate layers of sponge with soft & light mascarpone cream.  Divine!  Do not overlook the pink icing/cream with suspicious spelling in vivid green.

From an inside pocket of his black overcoat he pulled a slightly squashed box. Harry opened it with trembling fingers. Inside was a large, sticky chocolate cake with Happy Birthday Harry written on it in green icing.

Got something for ya. ‘Fraid I might have sat on it at some point! I imagine that it’ll taste fine just the same. Ahh. Baked it myself. Words and all. Heh.
